Why British Whisky?

Scotch Whisky has a number of protections enforced by law - these protections help to ensure the consistent quality of the whisky, but can also be limiting for producers who want to make slightly less-conventional spirits. By blending with English Whiskies, we've created the category of British Whisky where we adhere as closely as possible to the Scotch Whisky rules for the purposes of ensuring quality, whilst making changes - such as some time spent ageing in non-oak casks - that wouldn't be allowed for Scotch Whiskies.
